soak g soya in hot water and drain the excess water out
add salt and garam masala let it sit for minutes
then transfer these chunks into onion chopper , once chopped it'll look like soya bhurji / soaked version of soya granules
heat g oil in a non stick kadai , add curry leaves , chilli and mustard seeds
once the mustard seeds have crackled and the oil is aromatic of curry leaves and chilli add the chopped soya mixture into this
keep roasting on medium high it till it turns a little darker and it'll start to feel like you're roasting chivda but when you taste it it'll be a mix of crispy and soft texture
ta da it's ready! it's super tasty and tastes like potato fry/ fried yam
