100g sarson (Mustard greens), 50g bathua (Chenopodium), 3 green chilis, 1 chopped onion, 1tsp chopped garlic, 1 tsp chopped garlic 6 to 7 garlic pods, Spices as per taste ( salt, coriander powder, red chili powder, 2 dried red chili)
40g Maize flour
Saag- . Clean and wash the greens (sarson and bathua leaves) properly in a big utensil like tub/ bucket/paraat and chop. You can wash it again if needed. . Take a pressure cooker and put saag. Add green chilis, salt as per taste, - garlic pods . Keep the pressure cooker on medium flame and steam it ( steam is enough) for to minutes. Turn off the flame. . Open the lid after the steam comes properly. Start mashing saag with a madani (churner/masher) for the coarse texture. . Heat a pan on a low flame. Add tsp mustard oil and heat it for minutes. Add mustard seeds if you wish, dried chilis, chopped onion and spices as per your taste. Add mashed saag in the pan and mix it well. . Add a handful of maize flour or wheat flour (-g) in the saag and mix it well. . Cover the pan with a lid and cook it for to minutes until it's done. . Turn off the flame and serve it with a tempering of desi ghee or white makkhan.
Makki ki roti- . Make a dough of roti with maize flour and splash of water. Don't add any other flour in it for the best taste. (Don't knead a dough altogether. Knead a dough for chapati everytime otherwise it'll become loose.) . Take a dough and spread it on the even surface. Use hands to spread it. Keep it round and put small cuts with a knife. . Heat the tawa on high flame and put the roti on it. Cook it properly. Ghee can be used accordingly if you wish. . Flip the side of roti with soft hands and avoid tong. . Check if the both sides are cooked properly. Turn off the flame and serve Makki ki roti with tsp of ghee or white butter.
