Yellow moong dal, unsoaked: 30 gm
White urad dal, unsoaked: 30 gm
Besan: 30 gm
Curd: 100 gm
Hing: A pinch
Salt: As per taste
Water: As required
Eno: 3 gm
Rinse and soak moong dal and urad dal together for - hours.
Drain water from dal and grind it to a coarse consistency.
Now transfer the batter to a mixing bowl and add besan.
Give it a mix and let it rest for minutes.
Now add eno and give it a good mix. Steam them in an idli stand for minutes.
After minutes, check whether the vadas are steamed properly. You can prick a toothpick and check if it comes out clean. If not, let it stay in the steamer for another two minutes.
Switch off the flame and remove vadas with help of a spoon.
Heat water in a boiler and add salt & hing. Now switch off the flame and dip vadas into it.
Now squeeze vadas and dunk them in seasoned curd. You can also add chutney of your choice to enhance the taste.
