Baby Corn – 60gms chopped
Salt to taste
Crushed blackpepper to taste
Cornstarch – 20 gms
Oil – 10 gms
Ginger – 1 tablespoon grated ginger
Green chillies, sliced diagonally
Garlic – 1 tablespoon finely chopped
Spring Onion – 1 medium size finely chopped
Take babycorn in a bowl. Add salt, crushed pepper, half cornstarch and little water and mix well. . Heat sufficient oil in a pan. Shallow fry babycorns till its golden. Remove it on absorbent paper. . In the same pan with remaining oil, add ginger, green chillies and saute well. Add garlic and then mix and saute for a minute. . Add spring onion bulbs, mix and saute for a minute. . Dissolve remaining cornstarch in little water to make a smooth slurry. . Add some water, crushed pepper, slurry in the pan and mix well. . Add babycorn and toss to mix. . Add spring onion greens and mix well. Let it get heated through. . Serve hot.
