5 garlic cloves
2 inch chopped turmeric
2 inch galangal
Bottom 3 inches of lemongrass stock
8-10 fresh red chilies roughly chopped
10 chopped onions
5 tbps canola pil
Fish sauce to taste
2 tbps brown sugar
2 tbps tamarind paste
Add everything other than oil, fish sauce, sugar and tamarind paste to a food processor nad grind to fine paste. Add water as required
Heat oil in a wok on medium heat. When it is moderately hot, add the paste and saute it till it becomes aromatic
Finally add the remaining ingredients and let it cook while stirring till the solids seperate from oil
