Brown bread (3 slices) - 84g
Paneer - 30g
Curd (hung curd) - 50g
Sweet corn - 15g
Mushroom - 100g
Cheese cube/slices - 30g
Butter - 6g
Mixed herbs/ Oregano (optional) - a pinch
Red paprika / chilli flakes (optional) - a pinch
Salt - as required
Pepper - as required
The quantities are not fixed, you can play around
Hang the curd overnight (- hours). I kept it on a strainer and kept a bowl underneath to collect the extra water. This process can be used for many recipes whenever you want very thick curd or something as an alternative to mayonnaise.
Wash and cut the mushrooms into very small pieces. Add butter in a Pana and sprinkle some red paprika. Add mushrooms and saute it in slight oil with salt and pepper. Cook until the released water is evaporated.
Cut paneer into small cubes ( cm sides). Mix paneer and corn with curd.
Spread the mix on layers of bread and add the mushroom as the topping. Additionally, you can put some mixed herbs.
Top it with grated cheese / cheese slice.
Set the layers of bread and toast it on a tawa until golden brown. You can choose to grill it as well.
Cut diagonally (optional, but looks good 😜) and serve. Enjoy.
