tori/ turai/ ridge gourd (peeled and chopped in small trianglular shapes) 150g
turmeric 1/4 tsp
red chilli powder 1/2 tsp
coriander powder 1/3 tsp
paneer (grated) 30g
stevia (pinch)
salt as per taste
add g of oil in a wok/ kadai. once heated- add jeera (do not burn)
add green chillies (as per your threshold of spice)
add the tori/ turai/ ridge gourd and cook it through. cover with a lid.
once it's half done- add red chilli powder+ turmeric+ coriander powder and mix well
after its cooked completely- turn off the flame and add grated paneer
mix well and finally add that tiny pinch of stevia and salt as per taste- to balance and blend all the flavours in
lastly, ensure not to add salt early. the gourd will release water and make a soggy sabji. add salt towards the end once the turai is well cooked to your liking
