Ingredients

200g boneless, skinless chicken breast, cut into bite-sized pieces

1/4 cup plain yogurt (low-fat or Greek yogurt)

1 teaspoon ginger-garlic paste

1 teaspoon lemon juice

1 teaspoon tikka masala powder

1/4 teaspoon ground cumin

1/4 teaspoon ground coriander

1/4 teaspoon paprika

1/8 teaspoon turmeric powder

Salt to taste

80g basmati rice

1 small onion

1 clove

1/2-inch cinnamon stick

1 green cardamom pod

10g ghee/oil

Method

Step 1

For assembly: small onion, thinly sliced / tablespoon vegetable oil Fresh coriander leaves for garnish

Step 2

Marinate the chicken: In a bowl, combine the yogurt, ginger-garlic paste, lemon juice, tikka masala powder, ground cumin, ground coriander, paprika, turmeric powder, and salt. Mix well, then add the chicken pieces to the marinade. Coat the chicken evenly with the marinade, cover the bowl, and refrigerate for at least minutes.

Step 3

Cook the rice: In a non-stick pan, add the soaked and drained basmati rice along with the sliced onion, clove, green cardamom pod, cinnamon stick, bay leaf, water, ghee, and salt. Cook the rice on a gas stove over medium heat until it's % cooked. Drain any excess water and set the rice aside.

Step 4

Cook the chicken tikka: In the same non-stick pan, heat the vegetable oil or cooking spray over medium heat. Add the thinly sliced onion and sauté until they turn golden brown and caramelized. Then, add the marinated chicken pieces and cook until the chicken is cooked through and slightly charred, stirring occasionally.

Step 5

Assemble the biryani: Reduce the heat to low. Add half of the cooked rice to the pan, followed by a layer of half the cooked chicken tikka. Repeat the layers with the remaining rice and chicken tikka.

Step 6

Dum cook the biryani: Cover the pan with a tight-fitting lid and let the biryani cook on low heat for - minutes to allow the flavors to meld together.

Step 7

Garnish and serve: Once the biryani is done, remove it from heat and let it sit for a few minutes. Garnish with fresh Coriandrum leaves before serving.
