500g grated bottle gourd (lauki)
200ml low-fat milk ๐ฅ
15g ghee (clarified butter) ๐ง
20g chopped nuts (almonds, cashews, pistachios) ๐ฅ
1 tsp cardamom powder ๐, 1 small piece of cinnamon
1-2 tbsp honey/stevia/sugar-free for sweetness ๐ฏ
Pinch of saffron strands (optional) ๐ผ
Two pinches of salt ๐ง
Heat ghee in a pan ๐ณ and add grated bottle gourd. Sautรฉ on medium heat until it softens and releases water. ๐ฅ๐ฆ Pro tip: Add pinches of salt to quicken the water release process.
Add low-fat milk to the pan and mix well. Cook for a few minutes until the mixture thickens. ๐ฅโฐ
Add chopped nuts, cinnamon, and cardamom powder to the pan. Mix everything together. ๐ฅ๐
Reduce the heat and let the mixture simmer for about - minutes, stirring occasionally. This allows the flavors to blend. โฒ๏ธ๐
Add honey/stevia/sugar-free for sweetness, adjusting the amount according to your taste preferences. Mix well. ๐ฏโจ
Optional: Soak saffron strands in a little warm milk and add it to the halwa for enhanced flavor and a beautiful color. ๐ผ๐ฅ
Cook for a few more minutes until the halwa reaches the desired consistency. It should be thick and creamy. โฐ๐ฎ
Remove from heat and garnish with some extra chopped nuts on top. Serve warm or chilled. Enjoy! ๐๐ฝ๏ธ
