1 Cinnamon stick, 2-3 Cardamom, 3-4 Cloves and 5-6 Black pepper corn
Fresh coriander, mint and juice of lemon
Chaat masala to use as topping (optional)
Salt to taste, red chilli powder, turmeric and black pepper
Soak the grains and lentils overnight and drain it the next day.
To a pressure cooker add the grains and lentils and cook it on medium low heat for about mins.
Put the meat in a pressure cooker and cook it for about mins on medium heat.
Using the oil brown the onions and set them aside. The meat, grains, lentils and onions are ready, let's prepare the main flavours.
To the same oil add the garam masala (cinnamon, cardamom, cloves and black pepper) until their aroma releases on low heat, then add Tsp ginger garlic paste and cook it for a minute.
Mix the grains and lentils mixture with the garam masala, add salt, pepper and red chilli powder to taste (make sure the flavours are not overwhelming yet).
Blend the meat roughly and add it to the same pot as the mix.
If the consistency is too thick, add some water to smoothen it.
Cook it all together for about - mins on medium heat, stirring it so it doesn't stick to the bottom and everything mixes well.
Now it's time to plate like the picture I clicked. Take out some of the haleem on a plate, sprinkle some freshly chopped coriander and mint over it and a good dash of lemon, top all of this with the crunchy caramelized onion, want to take this even further? Sprinkle some chaat masala on top and enjoy some fresh and delicious Hyderabadi Haleem.
