wash rice and lentil well - times and soak in water for hrs. Add few methi dana at this point if you wish.
After hrs grind everything into thick paste. Avoid adding more water. Add curd and smooth the batter well.
Let it rest for - hrs for fermentation in warm place.
After hrs batter is well fermented but it doesn't really double in volume like idli batter.
Add grated/finely veggies of your choice like bottle guard, cucumber, carrot, palak, coriender.
Add spices of your choice n taste. I added a pinch of eno at this point. Mix everything well
Heat a non stick pan. Add oil and some sesame seeds. it's optional but gives nice texture.
spread batter evenly. let it be a thick layer.
Cover it with lid and cook for - Min. flip the layer and cook from other side
Handvo is ready! serve warm with choice of Chutney
