125 gms- Cherry Tomatoes
1tsp- Oregano
2- gem lettuce( if not available can replace with iceberg lettuce)
1 - Avacado
30 GM's - Feta Cheese
80 gms- Yogurt
2- Sweet cornš½
1 tbsp - White wine Vinegar
Step : Bring the water to boil, add the sweet corn into it and boil it for to mins or until corn tender or bright yellow Once done, drain them and set aside to dry Step : Finely chop the chives and Shallot. Step : Prepare the dressing, Mix the yogurt, white wine vinegar, chopped shallots,oregano and chives( save some for garnish), salt as needed, add TSP of water and mix well and this is your dressing. Step : chop the lettuce and cherry tomatoes into half. and add them on to the serving Plates. Step : Cut the Avacado length wise and keep aside. Step : Crumble the Feta Cheese Step : Heat a large pan with a drizzle of vegetable oil on high heat and add the sweet corn and cook them for - mins until they are charred. Once done, slice out of the corn from the cob using a sharp knife. Step : Top the plated lettuce and Cherry Tomatoes with Avacado slices, charred corn and crumbled feta Drizzle the yogurt dressing and garnish with left over chives and Enjoy!!
