Japanese soba noodles - 50 grams
Chicken mix boneless - 200 grams
Spinach - 70 grams
Zucchini- 40 grams
Capsicum - 100 grams
Cheese - 1 cube (about 20 grams)
Coconut oil- 5 ml
Brinjal - 50 grams
Tomato- 40 grams
Onion - 40 grams
Boil the noodles in hot water for about - mins, drain and rinse in cold water. Keep it aside. Blanch the spinach in the same hot water and set aside.
Boil chicken with some garlic pods, salt & turmeric (add little more water, enough to have some broth for the noodles)
In a wok, let coconut oil warm a bit and crushed garlic, after its golden brown, add onion, tomatoes, all the veggies and cook for few mins. Add the dressing. Then add the noodles and chicken along with broth and let it simmer for few mins. Soba noodles are ready to be served hot.
For dressing
Soy sauce - tbsp
Vinegar - tbsp
Chicken chilli powder (mix it in a little broth)
Chilli flakes and cheese to garnish
