250g chicken keema
50g onion (25g sliced + 25g pureed)
50g tomato (pureed)
50g rice
10g ghee
2 tsp chilly powder
2 tsp ginger garlic paste
1 bay leaf
2-3 green cardamom
1 black cardamom
1 inch cinnamom
2-3 peppercorns
2-3 tsp coriander leaves chopped
few drops of keora water
salt to taste
In a pressure cooker, take g of ghee, add the peppercorns, black cardamom and cinnamon till aromatic.
add the ginger garlic paste, and pureed onion , and fry till it is slightly brown.
add the tomato puree, and cook till done, and finally add the chilly powder
add the keema mixed with salt and half a cup of water. stir quickly so the keema doesn't form lumps
pressure cook for whistles.
after opening the pressure cooker, cook till all the water dries up
cook the rice according to your method of preference, but add the green cardamoms to it.
in a non stick pan, brush about - grams of ghee on the base, sprinkle salt and add the chopped onions. keep turning them till they are all nice and brown.
now add few drops of keora water and the remaining ghee, along with salt to the rice.
in an earthenware bowl, put alternate layers of rice and keema, completing with rice. garnish with the fried onions and coriander.
cover the bowl, and either microwave on high for - mins or place on the gas for mins.
