Palak Paneer with Soya Tandoori Roti

Ingredients

130 GMs palak/spinach

55 GMs paneer (I took low fat paneer)

100 GMs onion ( 80 GMs for cooking and 20 gm as salad )

7 GMs ghee( 5 gm for cooking vegetable and 2 gm to apply on tandoori roti)

7-8 garlic pods( be generous with adding garlic)

20 GMs curd ( 5-7 GMs for kneading dough and remaining to add in vegetable)

Spices like salt, green chillies, cumin seeds, cumin powder, garam masala, turmeric, red chilli powder

For tandoori roti, 18gm defatted soya/soya chunks flour and 25 gm wheat flour, salt, little curd and water to make dough

Method

Step 1

To knead dough take soya flour and wheat flour in a vessel, add little salt and some curd. Mix well and then add water as required to form a smooth dough . Let this dough rest for some time

Step 2

To make Palak paneer, take some water in a vessel and let it boil. Once boiled add spinach leaves ( pls ensure to thoroughly wash spinach before use) . Let the spinach be in water for mins and immediately remove and run through cold water. Let it cool and then make a paste in a grinder by adding one green chilli

Step 3

Take a non stick pan, put some ghee, add cumin seeds, handful of chopped garlic . Once the garlic changes colour add onion and continue cooking. Once onion is translucent add green chilli along with all dry spices like salt, turmeric, cumin powder. Then add little curd and cook for around - seconds. Add the spinach purée. Let it cook for few minutes and add paneer cubes. Add little garam masala and squeeze some lime juice.

Step 4

Make tandoori roti just before eating. I made it on tava. Make a semi thick roti from the dough. Apply some salt water on one side of the rolled roti and place it on hot tawa. Once cooked on one side, turn the tawa upside down and cook the other side of roti on direct flame. I also added some sesame seeds and flax seeds on the roti for some extra flavour. Palak Paneer with heathy soya tandoori roti is ready 😊
