3 large carrots grated
3 tablespoon of Ghee or palm oil (if you are vegan)
Almond milk - 1 cup
Cardamom powder - 1 Teaspoon
Coconut sugar - 4 tablespoons or stevia or monk fruit sweetener
Chopped dry fruits to garnish
Heat a large skillet (kadhai) & add in the ghee when kadhai is hot . Add in the grated carrots and mix well so that carrots are well coated with ghee . Cover the skillet for mins until the carrots are tender . After mins, carrots would reduced to half its original size and brightened in color . At this point, add in almond milk & cardamom powder . Stir well and cover the skillet again for mins until the carrots have absorbed all the milk . Add the sweetener and cook for more mins . Turn off the gas & garnish with dry chopped fruits before serving Enjoy!!
