Paneer- 100gm
Milk low fat- 50ml
Custard powder- 10gm
Saffron strands- a pinch
Cardamom powder- 2gm or a pinch
Almond- 10gm
Kesar/saffron coloured essence - 2-3 drops
Zero calorie sweetener- as per the taste.
Ghee - 2 gms
Grate the paneer and crumble and mash it with hands until it turns like a soft paste. Kneed it to obtain the same. You may use homemade paneer as well to get it more soft. Meanwhile soak the saffron strands in luke warm water ( tbsp) for about - minutes in a bowl.
Brush the non-stick pan with ghee, add this paneer and saute it until all the moisture from paneer is absorbed on a low flame.
Add the kesar coloured essence to the saffron water and add it to the paneer mixture and mix all well on a very low flame.
In a bowl, add tbsp of water, add sweetener and cardamom powder and custard powder and mix all well so that there are no lumps.
Bring milk to boil and add the above custard liquid mixture and whisk constantly so that there are no lumps. Add this to the paneer mixture along with chopped almonds and continue cooking it until you get thick soft consistency and all moisture is absorbed and you get a soft dough like consistency.
Use silicon moulds or baking baking tray, lay out the mixture and spread it evenly. Refrigerate it until it’s set or for - minutes atleast. Do this garnish
Remove from silicon mould or baking tray or any mould and cut it into your desired shapes. Garnish with the toppings like almond slits, saffron strands and a dash of cinnamon powder.
