Fill out up a large pot halfway with water, and place it on your stovetop. Then on high heat bring the water to a boil. When your water is boiling, place your spinach into the water. Use a slotted spoon to submerge the spinach in the boiling water. Once you drop in your spinach, set a timer for seconds. The spinach is ready when it turns a bright green color. Scoop up your spinach using a slotted spoon and immediately dunk the spinach into the ice water. Do this as soon as you remove it from the boiling water for best results. After about - seconds, scoop up your spinach with a slotted spoon, and place the leaves in a strainer. Push down on the spinach gently with your spoon to remove excess water. Set this aside. Meanwhile in a small pan boil onion, cloves of garlic, half a in ginger and a green chili. Now blend all these ingredients and set is aside.
In a pan add butter and olive oil just let the butter melt in medium heat then add the spinach purée into the pan and let it boil add water as required. Meanwhile in a blender add paneer and little water and blend it till it becomes creamy. Add water if needed. Take or spoon of this paneer cream aside. Rest of it add it in the soup. Add salt and pepper as per taste. Serve hot.
