100gms Chicken
10gms Oil/Ghee/Butter
2.5 cups Water
1 small/medium Tomato
1 small/medium Onion
4 cloves Garlic
1 piece Spring onion
3 Green chillies
Coriander chopped
4-5 Pepper corn (Kali Mirch ka daana)
4-5 Cloves (Laung)
Half a lemon
Small piece of Ginger
1 piece of Star Anise (Chakra phool)
Salt (as required)
Step - In a deep pan add cups of Water, Chicken, the Onion part of spring onion, - peppercorn, - pepper cloves, star anise and put it to Boil.
Boil the chicken for approx - mins till its ready to shred.
Step - Meanwhile in a blender, add diced Onion, diced tomato, Chillies, Garlic, Ginger and make a paste. (add a tablespoon of water if required not more)
Step - Once the chicken is boiled, filter the water into another vessel and keep the chicken aside. We will need this chicken broth for the soup.
Step - In a hot pan, add oil and add the paste we made earlier and saute it for - mins on medium flame.
Step - Add the chicken broth to the paste and start mixing.
Step - Chop the leaves of spring onion and the coriander and add to the chicken broth.
Step - Add salt as required and squeeze the lemon juice into the broth.
Step - Finally shred the boiled chicken into fine pieces and add to the broth.
Voila. sprinkle coriander from top for garnishing. Your Chicken thukpa is ready.
