1. Ridge gourd- Torai ( 250 grams )
2. Chana dal- 10 grams, Urad Dal- 10 grams
3. 2-3 dry red chilly
4. Cumin seeds
5. Oil - 10 grams
6. Tomatoes- 75 grams
7. Curry leaves
8. Garlic - few cloves
9. Mustard seeds
Dry roast chana dal and urad dal until golden. Dry roast red chilies as well and then add cumin to the hot pan. Set aside to cool.
To the same pan, add . grams oil and fry gourd until they are cooked little for to minutes. Set aside to cool.
Next fry tomatoes until mushy and add garlic to the hot pan. Turn off flame post this.
Powder the dry roast dal and red chili first in a jar.
Slightly coarse is also ok.
Add gourd, tomatoes and garlic. Blend to a coarse or smooth paste to suit your liking.
Make the tempering in hot oil around . grams by adding red chili, cumin,garlic, mustard and grams dals. When they turn golden, add curry leaves, hing. Pour this to the chutney.
Serve it with chapati, dosa, Idli, rice etc.
