Salmon fillet - 120 gm
Potato-400 gm
Onion- 100 gm
Olive oil- 15 ml
Homemade Mayo- 5 ml
Yogurt- 30 gm
Paprika- 1 tsp
Red chilli powder - 1 tsp
Garlic powder - 1/2 tsp
Pepper powder - 1/2 tsp
Salt - as per taste
Lemon - 1 tsp
Spring onion - a bunch
Preheat the oven to deg c.
Mix all the spices together and add ml oil in to it.
Chop onion into big chunks and mix half of the spice mix into it. Put it in a baking tray and bake until it turns crispy.
Cut the potatoes as you would do for french fries. Rub it with ml olive oil and enough salt.
Take the onion out and spread potatoes in the same pan. Bake till the potatoes are cooked and slightly brown.
Rub the half of the rest of the spice mix on the salmon along with the lemon.
Take the baking tray out and top it with the already cooked onion. Place the marinated salmon on top and place the tray back in the oven.
After five minutes take the tray out. Use a fork to shred the salmon. Spread evenly over the tray. Mix some water in the remaining spice mix and pour over the salmon evenly.
Bake more - more minutes until salmon is cooked perfectly.
To make home made mayo- add an egg, tsp vinegar, a pinch of salt and pods of garlic in a blender. Now add sunflower oil little by little and pulse for seconds. Keep on doing this until you get mayo of thick consistency. Might take around ml oil. Keep the mayo in an airtight container in refrigerator.
Mix a teaspoon of homemade mayo, yogurt, salt, a pinch of black pepper and oregano with a little water. Pour the sauce over the baked salmon. Top it with the spring onion and serve hot!
