Bitter guard 250 grams
Onion chopped 1/4 cup
Green chili 1
Basic tempering
Garam masala 1 tbsp
Turmeric
Salt
Red chili powder 1 tbsp
Grated coconut 1 tbsp
Sesame seeds 1 tsp
Coconut oil 10 grams
Medium size Tomato 1/2 diced
Chop the bitter guard in to thin slices and add salt and turmeric to it and squeeze out the water gently
Add chili powder, garam masala and yogurt in to the bitter guard pieces and keep it a side
Heat oil in a pan add the tempering when tempering starts to splutter add onion chopped, slit chili and sauté a bit now add some more salt and turmeric ( remember we already added salt to the bitter guard so be careful while adding salt to the gravy)
Now sauté it a bit and add diced tomato and let it cook for few minutes until everything gets soft
Now add the marinated bitter guard and sauté for two minutes and add some water (optional)
Check for salt and spices if needed you can add some more spices now and place the lid let it cook for few more minutes
