Thai curry paste
Ginger,garlic chopped,red chilly
Oil 10gm
Coconut milk 90ml
Veggies as per your preferences I used egg plant,baby corn,mushroom,zucchini
paprika,salt,coriander powder
kafir leaf,basil,lemongrass
Boil tofu for min,drain and squeeze all the water out, cut into pieces and keep aside.
In a pan add oil, add ginger garlic and saute all the veggies
Add coconut milk and Thai curry paste in salted veggies let it simmer for -min, Add tofu pieces to it and let it cook for -more minutes
Add paprika powder,salt to taste , adjust the consistency of curry as per your requirement add kafir leaf basil and lemongrass to curry and let it simmer.
Serve with Basmati or Jasmine rice.
