Dal - Besan/gram flour - 140g
Curd - 100g
Green chilli paste - to taste
Ginger paste - to taste
Baking soda/eno fruit salt - 1 tsp
Lemon juice (if using baking soda) - 1 tbsp
Turmeric powder /haldi - 1/2 tsp
Ghee - 10g
Mustard seeds - 1 tsp
Coriander leaves chopped - 2 tbsp
Sift in besan along with salt, haldi, then add curd and mix till you get idli batter consistency. Can add little water if needed.
Now add the ginger-green chilli paste and mix till combined Can let it sit for half an hour if you have time
Keep the container ready. I used a glass container lightly greased with ghee
Now add eno and mix few times quickly, it will bubble up. If using baking soda, then add baking soda and lemon juice instead of eno Quickly transfer to the container
Best to steam in steamer, if short of time can microwave for - mins
Check with toothpick if done else keep for some more time
For tadka, add the ghee, mustard seeds, coriander leaves in this order. Finally add some water and add it all on the dhokla
Only disadvantage with microwave was that the corners came out a bit hard
