Whole egg - 2
Egg white - 1
Sugar - 20g (to make the caramel)
Low calorie sweetener of your choice - 10 g
Turmeric - A pinch (gives it the rich yellow colour)
Salt - A pinch
Milk - 500 Ml
Vanilla essence - Few drops
Take milk in a vessel, add the low calorie sweetener, vanilla essence, turmeric & salt to it. Heat it until lukewarm/warm (doesn't have to be hot otherwise it'll cook the eggs)
Beat whole eggs & white very well & add it to the milk.
TIP : If you have vanilla flavoured whey, feel free to add it to the milk to increase the protein content even further & give it the delicious vanilla taste.
Take sugar in an aluminium vessel (important step, I've tried with steel vessels, they're bad). Add a dash of water & cook it on medium heat while stirring until the sugar caramelises, once done, move the vessel around to coat the walls of the vessels with the caramel.
Once cooled down, pour in the milk mixture into the aluminium vessel. Take the idli making utensil (we need to steam the aluminium vessel), put the milk vessel in it & let it steam on low heat for about mins.
Take the pudding out of the idli maker & let it cool outside.
Refrigerate it for a few hours (important step) & enjoy your delicious high protein velvety creme caramel pudding!
