200 grams of whole wheat flour or almond flour (for a gluten-free option)
150 grams of mixed dried fruits (raisins, cranberries, apricots, and figs)
100 grams of nuts (almonds, walnuts, and pecans), roughly chopped
2 large eggs
100 ml of unsweetened applesauce or mashed banana (as a natural sweetener)
100 ml of orange juice
Zest of 1 orange
1 teaspoon of baking powder
1 teaspoon of mixed spice (cinnamon, nutmeg, and cloves)
1 teaspoon of vanilla extract
50 ml of coconut oil or olive oil
A pinch of salt
Preheat your oven to °C (°F). Grease and line a cm round cake tin with baking paper.
Prepare the Fruit Mixture: In a bowl, combine the mixed dried fruits with the orange juice and zest. Let it soak for at least minutes to plump up the fruits.
Mix Dry Ingredients In a large bowl, combine the whole wheat flour, baking powder, mixed spice, and a pinch of salt. Mix well to ensure the baking powder is evenly distributed.
Prepare Wet Ingredients In another bowl, whisk together the eggs, applesauce or mashed banana, oil, and vanilla extract.
Combine Mixtures Add the soaked fruit mixture, including any remaining juice, into the wet ingredients. Mix well. Then, gradually fold in the dry ingredients until well combined. Stir in the chopped nuts.
Bake the Cake Pour the batter into the prepared cake tin and smooth the top. Bake in the preheated oven for about . to hours, or until a skewer inserted into the center comes out clean. If the top begins to brown too quickly, cover it with a piece of foil.
Cool and Store Allow the cake to cool in the tin for about minutes before transferring it to a wire rack to cool completely. Once cooled, you can wrap it in foil and store it in an airtight container. This cake can also improve in flavor after being stored for a few days.
Tips: - Customization: Feel free to customize the dried fruits and nuts according to your preference. - Sugar-Free Option: The natural sweetness from the fruits and applesauce or banana should suffice. Adjust to your taste if needed. - Moisture: If you prefer a more moist cake, you can add a little more orange juice or a couple of tablespoons of unsweetened yogurt.
