marinate snapper in olive oil with pinch of salt and pepper( add herbs according to interests coriander goes well) for mins
in roll boiling water add corn ,carrots boil for mins then transfer them in chilled water
now in a grill pan add marinated snapper fry both sides for mins then in the same pan add all the veggies and a dollop of low fat butter and coriander finely chopped,chill flakes,salt for quinoa fry quinoa for few seconds then add : water ratio and cool till fluffy. you can add flavor as per interest ( cinnamon goes well)
now assemble everything in a plate and add lemon juice jst before serving
