Pasta 50grams
soya chunks 30grams
veges - mushroom 100g, beetroot 100grams, onion 50grams, garlic 4 medium sized cloves
salt, pepper
oregano, chilly flakes
milk 20ml
cheese 15grams (optional)
Boil pasta of your choice in a suitable vessel and soften the soya chunks by resting it in hot water
To make the sauce, to a pan add grams of oil , once the oil is hot add garlic and onion and sautee till it's brown
Add beetroot to the sauteed onion and garlic and sautee it for another - minutes
Turn off the stove and let it cool and then make it into a puree
To another pan add - grams of oil, add mushroom to heated oil, sautee mushroom till it sheds out water. next add the soya chunks
Add the beetroot puree and mix it and adjust the consistency by adding milk/ pasta water
Add salt, pepper and oregano, chilly flakes
Top it with cheese (optional).
