For Pani (Water): Tamarind: ¼ cup (soaked in water) Mint leaves: ½ cup Coriander leaves: 1 cup Green chilies:3 Cold water or ice cubes Salt To taste Stevia: 1 tsp Chaat masala: 1 tsp Roasted cumin powder: 1 tsp Red chili powder: ½ tsp Dry ginger powder: ½ tsp
For Stuffing: Boiled potatoes: 2 medium 1 small chopped onion Red chili powder: ½ tsp Roasted cumin powder: ½ tsp Chaat masala: 1 tsp Salt: To taste
For Air-Fried Pooris: Readymade puris: As needed Oil: For brushing
Prepare the Pani: Soak tamarind in water for - minutes, then squeeze and extract the tamarind water. Set aside. In a blender, add mint leaves, coriander leaves, green chilies, and a little cold water. Grind into a smooth paste. Strain the blended mixture into a bowl. Add tamarind water to the strained paste. Mix in salt, stevia, chaat masala, cumin powder, red chili powder, and dry ginger powder. Adjust the consistency by adding more cold water and chill in the refrigerator.
Prepare the Stuffing: In a bowl, combine mashed boiled potatoes, chopped onions, red chili powder, cumin powder, chaat masala, and salt. Mix well to make the stuffing.
Air-Fry the Puris: Lightly brush the readymade puris with oil.Place them in the air fryer basket in a single layer.Air-fry for - minutes until crispy and golden.
Gently crack open the top of the air-fried puris.Fill each puri with a small amount of potato stuffing.Pour the chilled pani into the puris or serve it on the side for dipping. Enjoy your healthy and crispy Air-Fried Pani Puri!
