Step 1

🍠 Roasted Sweet Potato • g sweet potato, cut into chunks • Salt, pepper, paprika & mixed herbs • Roast at °C for – minutes until golden and crispy. 🍳 Scrambled Eggs • whole eggs • Salt & pepper to taste • Cook on low heat, stirring gently until soft and fluffy. 🥑 Avocado Pomegranate Toast • slices whole-grain bread, toasted • ripe avocado, mashed • Finely chopped tomato & onion (optional) • Pomegranate seeds • Salt, pepper & lemon juice Plate the scrambled eggs, roasted sweet potato, and avocado toast. Top with pomegranate seeds, add a squeeze of fresh lime, and enjoy!
