50 g raw rice 35 g dry soya chunks 100 g mixed vegetables (red, yellow and green bell peppers/capsicum) 1 large onion, finely chopped 1 tsp ginger-garlic paste 10 ml oil 1–2 tsp Shahi Biryani Masala (any brand) Salt to taste
Step : Prepare the soya chunks Bring water to a boil with a little salt. Switch off the flame and add the soya chunks. Let them soak for approximately minutes until soft and juicy. Strain the water and lightly squeeze the chunks. Don't squeeze them completely dry; retain a little moisture. Step : Cook the rice Wash and cook g raw rice separately. Keep the cooked rice aside. Step : Prepare the biryani masala Heat ml oil in a pan. Add ginger-garlic paste and sauté briefly. Add the chopped onion and sauté until nicely cooked. Add – tsp Shahi Biryani Masala and sauté well. My little personal trick: I prefer straining the biryani masala before using it so that I get the aromatic powdered masala without the whole spices, bay leaves and other larger pieces. This is completely optional! Step : Add the vegetables and soya Add the colourful capsicums and prepared soya chunks. Add salt as required. Sauté until the vegetables are partially cooked and the excess moisture evaporates. Step : Bring it all together Add the separately cooked rice. Adjust salt according to taste. Gently mix everything until the rice is well coated with the masala. Cover and let it cook on low flame for a few minutes so that all the flavours come together. Your delicious Royal Soya Protein Biryani is ready! Serve hot with a generous portion of chilled cucumber raita.
