Ingredients

Serves: 2 🌱 Ingredients: β€’ 50g soya chunks β€’ 1 tsp (5g) ghee β€’ 200g chopped onions β€’ 1 small cinnamon stick β€’ 3 green cardamoms β€’ 2 bay leaves β€’ 5 cashews β€’ 1 tbsp kasuri methi β€’ 150ml milk β€’ Salt to taste

Method

Step 1

Soak soya chunks in hot salted water until soft. Drain & lightly squeeze excess water. Heat ghee in a kadai. Add cinnamon, cardamom & bay leaves. Add onions and sautΓ© till golden/translucent. Cool the mixture. Remove bay leaves, peel cardamoms & keep the seeds. Grind the onion mix with cashews, cardamom seeds, kasuri methi & ml milk into a smooth creamy paste. Add the paste back to the kadai. Pour remaining milk and add soya chunks. Add salt to taste and simmer on low flame for minutes. ✨ Done! A creamy β€œmalai-style” gravy without actual malai 🀍
